peanut butter brownie bites

Now that our kitchen is completely barren of all leftover Easter candy, I've been wanting to make my second favorite dessert of all time which is peanut butter cheesecake. Yes, my life is hard. I decided that I would go to the store to get the ingredients yesterday but then Julia foiled my ambitious plan with a 4.5 hour (incredible and greatly appreciated) nap. So I had to improvise. Yes, my life is wild. I couldn't find a "best brownie bites in the world with peanut butter and a graham cracker crust" recipe even with the help of the Google so I'm going to be generous and share my made up recipe. Of course Julia woke up just in time to "help" me and Sebastian kept things flowing smoothly by backwards crawling himself under the table repeatedly needing to be rescued. All I'm saying is that these are about a 1.2 on the difficult scale.


Ingredients:
1 square pan of slightly undercooked brownies (I cut this recipe in half, used Stevia in place of the sugar, and lined the pan with parchment paper for an easy exit)
1 cup graham cracker crumbs (I threw graham crackers in the blender - fresh. I am 124% positive they sell pre-ground crumbs at the store for your convenience)
1/4 cup butter (I used Smart Balance)
1/2 cup peanut butter (I used Better N Peanut Butter)
1 tsp sugar/sugar substitute (I used Stevia)

Okay. So when the brownies are done under cooking and your hands can tolerate the heat, just kind of dig in and roll the brownies into balls. The middle non crusty part is obviously ideal but with a little perseverance you can eventually form the crust into balls as well. I'd say mine were about the size of a rounded tablespoon. Throw them on some parchment paper in the freezer while you melt the butter, peanut butter, and sugar in the microwave (30-45 seconds) and grind your crackers (or open the box of crumbs if you went the lazy route).
I should've let the brownies freeze for longer than 7 minutes but I was impatient so I just took them out one by one. I dipped them in the peanut butter spackle, and then rolled them quickly into the cracker crumbs. And repeated with the rest of the balls and then refroze. Easy!

Now eat.

  11. Sebastian looks so old! I think it's all that hair. Did you use Just for Men to give him that distinguished look? It looks way thicker - maybe he's inherited Simon's hair genes.

  12. Owmp. I will be making these (gluten free with TJ's ginger snaps and GF brownies) on Sunday and eating them allll as a reward to myself for running a half. Or, jogging.
